Homemade Granola Bars

With Spring comes sunshine and outdoor activities. I’m sharing my absolute favorite homemade granola bar recipe to take on the go. I found it on Pinterest years ago and have tweaked it slightly, so the credit is unknown. These are very filling and absolutely delish. Enjoy!

I fit these in a standard 13”x9” glass pan, spray it first and cut it into 16 pieces. They are around 270 calories per serving.

Combine:
-1 c. wheat flour (regular is fine, too)
-2 c. cooked quinoa (the ratio is 2/3 c. dry quinoa cooked with 2 c. water = 2 c. cooked quinoa)
-2 c. oats
-2/3 c. chopped nuts (I use peanuts)
-1 tsp. cinnamon
-1 tsp. baking soda
-2 tbsp. chia seeds (pro tip: I get this from Whole Foods in the bulk section, or from Trader Joe’s)
-2/3 c. craisins or raisins
-If you’re feeling fun, add chocolate chips

Combine:
-2 eggs
-2/3 c. peanut butter
-1/2 c. honey
-1 banana
-1 tsp. vanilla

Mix the wet and dry ingredients together in shifts. Bake at 375 F for about 20 minutes.
These do not freeze well, as an FYI :)
